Empanadas

We all love empanadas and they're actually easier to make than you think!

Quick Empanadas

To simplify the process we used frozen empanada dough/discs, which you can find in the frozen section at most grocery stores. You can choose many different fillings to put inside, for this recipe we used a beef, egg and onion mix.


Ingredients

  • 1 pack of Frozen Empanada Discs

  • 1 pound lean ground beef

  • 1/2 an Onion

  • 3 Eggs

  • Garlic Powder

  • Paprika

  • Cumin

  • Salt

  • Black Pepper


Step 1:

Pull out your empanada discs from the freezer and let them thaw. It doesn't take long for them to thaw, only a few minutes.


Step 2:

Fill a pot with enough water to submerge the eggs. Hard boil the eggs. It should take about 10-12 minutes.


Step 3:

While your eggs are boiling, cut the onion in half and dice into small pieces. In a pan, pour in some olive oil and add the diced onion and sauté.


Step 4:

When the onion is aromatic and cooked through, add the lean ground beef. Cook until the beef is browned, then add your spice mix. The spice mix is a blend of a 1/2 teaspoon of Salt, 1/2 teaspoon Garlic Powder, 1/4 teaspoon Cumin, 1/4 teaspoon Black Pepper, and a 1/2 teaspoon Smoked Paprika. Stir everything together and turn off heat to let the pan cool slightly.


Step 5:

Once your eggs are boiled, add them to a bowl of ice water to cool down. Before you peel your hard boiled eggs, set your oven to 375. Then remove the shells from your eggs. Dice the hard boiled eggs into pieces.


Step 6:

Add the diced eggs to the beef, onion and spice mix. Thoroughly stir it all together and add the mixture to a bowl.


Step 7:

Take your empanada discs one at a time and add a heaping spoonful of the beef mixture to the center of the disc. Dip your finger in water and make a ring around the edge of the disc. This will make it easier for the edges to stick. Pull one side of the disc to overlap the mixture and seal the other side to make a half moon shape. Pinch the edges to seal the empanada and use a fork to crimp the edge.


Step 8:

Place some parchment paper on a baking sheet and add the empanadas. If you wish to freeze some empanadas to consume at a later time, wrap the empanadas in the individual sheets that the dough discs were on and place them in a freezer safe bag.


Place the baking sheet with empanadas in the oven for 25 minutes. Check on them periodically throughout the baking process as ovens vary in cook time. The empanadas should look golden brown. We hope you enjoy our empanada recipe!
