Fat Washing Spirits


Fat Washed Campari

We've been experimenting with fat washing our spirits. You can use different kinds of fats from bacon grease to butter. In our case, we used Coconut oil and chose Campari and Elijah Craig as our test subjects. We did a 3 to 1 ratio, using a 1/3 cup of melted coconut oil and 1 cup of spirit. We poured everything into a freezer safe container and gave it a stir. We left it undisturbed in a cool, dark pantry for 24 hours. Then we stuck it in the freezer for 4-6 hours.


When we took it out of the freezer, we scooped the large hard chunks of fat and disposed them. Then we strained the fat washed spirits through a strainer with paper towel into a mason jar. You could also use cheese cloth instead of paper towel.


We compared the fat washed spirits to their regular counterparts and the differences were quite noticeable. The Campari turned out amazing. The coconut oil added a nice tropical element and mellowed out the burnt orange flavor. With the Elijah, it softened the alcohol burn of the bourbon and added a touch of sweetness. Both fat washed spirits also had a very silky mouthfeel. The Fat Washed Campari was definitely the winner of the two and was used to make one of the best tasting Negronis I've ever had.


It takes a bit of time to fat wash your spirits, but it is definitely worth the effort for special occasions.
