Instant Pot Carnitas

Here's a tasty recipe for Instant Pot Carnitas that is both quick and easy. We hope you enjoy them!

Instant Pot Carnitas

Ingredients

• 2-2.5 pounds boneless pork shoulder roast, cut into 2 inch cubes

• 1/2 cup fresh orange juice

• 1 lime juiced

• 1/2 cup chicken broth

• 1 teaspoon ground cumin

• 1 tablespoon chili powder

• 1 teaspoon dried oregano

• 1 tablespoon brown sugar

• 1 teaspoon kosher salt

• 1/2 teaspoon freshly ground black pepper (for more heat sub red pepper flakes)

• 3/4 yellow or white onion, cut into wedges

• 3 garlic cloves, smashed or pressed


Ingredients to finish dish after cooking:

• use the remaining 1/4 onion and dice to top your carnitas

• 1/4 cup cilantro chopped

• your choice of hot sauce or salsa


Step 1

Quarter your onion and set aside 1/4 of it. Cut the remaining onion into wedges. Peel and smash your garlic cloves . Cut your boneless pork shoulder roast into 2 inch cubes.


Step 2

In the Instant Pot add your orange juice, chicken broth, lime juice, brown sugar and spices. Add your garlic and onion wedges and stir. Then place your cubed pork in and stir until everything is coated. Secure the lid and select the meat/stew setting for 30-35 minutes.


Step 3

When the Instant Pot beeps allow for a 15 minute slow release. Remove meat and set on a plate or tray and use 2 forks to shred the meat. As an option you can scoop some of the liquid and fat out and add to a pan with the shredded meat. Pan fry until lightly crisped. Add back into the instant pot.


Step 4

Plate your tortillas and add your meat, onion, and cilantro and enjoy your instant pot carnitas! If you want to add hot sauce or salsa, please do.


Pressure Cook Time: 30 minutes

Release Time: 15 minute natural release

*Optional: Brown in frying pan to crisp before serving
