We are big into football in our house. One of our favorite, easy to make meals on game day is Chili. Once we realized we could make it even faster in our Instant Pot, it was a game changer. We hope you enjoy this recipe as much as we do!
Game Day Chili
• 2 tbsp Olive Oil
• 1/2 Yellow Onion or Full Shallot diced
• 4 Garlic Cloves Minced or Pressed
• 1 pound Lean Ground Beef (90/10)
• 1 pound Ground Chorizo
• 1/2 Cup of beer
• 1 Can Red Kidney Beans
• 1 Can Great northern Beans
• 1 Can Green Beans
• 1 Can of Tomato Sauce
• 1 Can whole peeled tomatoes
• 1 teaspoon Chicken bouillon
• 1 teaspoon Salt
• 1 teaspoon Black Pepper
• 2 teaspoons Cumin
• 2 teaspoons Chili Powder
• 2 teaspoons Smoked Paprika
Top with
• Sour Cream or Avocado
• Green Onion
• Chips
• Pickled Sliced Jalapeños (optional)
Step 1:
Turn the Instant Pot to sauté mode and add the olive oil. After the oil begins to heat up add diced onion and stir, cooking for 2-3 minutes. Then add your pressed garlic and sauté for another minute. Add both of the ground meats. Cook for about 3-5 minutes stirring occasionally and breaking into into bits.
Step 2:
Add the beer, whole peeled tomatoes, and tomato sauce. Break up the tomatoes with a wooden spoon. Stir everything together and scrape up the brown bits on the bottom of the pot.
Step 3:
Add the salt, pepper, cumin, chili powder, and paprika. Stir them in and mix thoroughly.
Step 4:
Add the kidney beans, great northern beans and green beans. Don't stir them in. Let them sit on top of the chili and level them out.
Step 5:
Attach the lid, then hit manual and cook on high for 5 minutes. When finished do a quick release.
Step 6:
Give everything a good stir to ensure all the ingredients are mixed in together. Add the bouillon and stir it In. Serve with a dollop of sour cream and diced green onion. Also make sure you have tortilla chips handy for dipping and a cold beer to wash it all down. Enjoy your game day!
