An Aperol cocktail with a rich, smooth texture that is rounded out with citrus. The Tony can be blended or shaken but I think the froth you get from blending it with a little ice gives it a little extra something.
1 oz Vodka
1 oz Aperol
1/2 oz Lemon Juice
1/4 oz Simple Syrup (preferably a rich simple syrup)
1 Egg White
1 Dash Orange Bitters
1/2 to 1 Cup of Ice
Serve in chilled Martini Glass
Rich Simple Syrup Recipe: This is a 2:1 Ratio
2 Cups Sugar
1 Cup Water
Add water and sugar to a sauce pan and stir constantly over medium heat until sugar is dissolved. Allow it to come to a low boil then reduce heat. Allow to simmer for about 5 to 7 minutes. Remove from heat and allow it to cool. Once cool it is ready to use in your drinks. Store in a bottle or jar in your refrigerator.
