This summer, the Mojito mint was thriving on our rooftop garden. We couldn't let it go to waste, so we've been trying to incorporate it as much as we can with our food and beverages. Hence, we have made lots of Watermelon Mojitos this summer. The Watermelon Mojito is a bright and refreshing cocktail that is perfect to enjoy on a hot day. It can easily be made into a mocktail as well, just disregard the rum. Here's our recipe:
Watermelon Mojito (Makes 2 Drinks)
Steps
Add the watermelon, mint and lime juice to a cocktail shaker and muddle.
Add Rum, Simple Syrup and ice. Shake for 20-30 seconds.
Fill a highball glass halfway with ice.
Pour the cocktail over the ice and top with soda water. If you prefer not to have the muddled watermelon and mint pieces in the glass, feel free to use a Hawthorne Strainer to keep the muddle pieces out.
